BASIC RECIPE

Water 65°F (+/-) 4 lbs. 4 oz. 42.5%
INSTRUCTIONS
Small Batch
  1. Place: Place water into the mixing bowl first, then add cake donut mix.
  2. Mix: Using a paddle, mix for 1 minute in low speed, then 2 minutes in medium speed.
  3. Batter temperature: 74°-76°F.
  4. Rest: Rest batter for 10-15 minutes before depositing.
  5. Fry: Fry at 375°F for 45 seconds per side, then repeat for 30 seconds per side.
