BASIC RECIPE

INGREDIENTS

Cotton Gold Muffin Mix 5 lbs. 100%
Vegetable Oil 1 lb. 4 oz. 25%
Whole Eggs 1 lb. 20%
Egg Whites 8 oz. 10%
Cranberry Juice Cocktail 1 lb. 20%
Water 65°F (+/-) 1 lb. 6 oz. 27.5%
Craisins / Raisins (optional) 1 lb. 4 oz. 25%
INSTRUCTIONS
Small Batch
  1. Measure: Measure all liquids and add them to the bowl.
  2. Stir: Stir liquids with a wire whisk to blend.
  3. Add: Add Cotton Gold Muffin Mix on top.
  4. Blend: Blend for 2 minutes in low speed, then scrape the paddle and bowl.
  5. Mix: Mix for another 2 minutes in low speed.
  6. Fold: Fold in craisins or raisins, or mix them in low speed for 30 seconds.
  7. Scale: 3-4 oz. per muffin.
  8. Bake: 375°F for 20-25 minutes.
