BASIC RECIPE

Whole Egg 4 lbs. 40%
Oil 2 lbs. 8 oz. 25%
Water 65°F (+/-) 2 lbs. 4 oz. 22.5%
INSTRUCTIONS
Small Batch
  1. Pour: Pour whole eggs into the mixing bowl, then add cake mix.
  2. Mix: Mix for 1 minute in slow speed, scrape, then cream for 3 minutes in medium speed.
  3. Add water: Add water, mix for 1 minute in slow speed, then scrape down.
  4. Add oil: Add oil, mix for 1 minute in slow speed, scrape down, then mix for 3 minutes in medium speed.
  5. Batter temperature: 70°-72°F.
  6. Scale: 8 × 4-inch loaf pan: 14 oz.; 8-inch angel food pan: 1 lb. 4 oz.
  7. Bake: 360°F for 40-45 minutes.
