Water 65°F (+/-) 2 lbs. 20%
INSTRUCTIONS
Small Batch
  1. Mix: Using a paddle, mix all ingredients for 4 minutes in medium speed, scrape down, then mix for 2 minutes in low speed.
  2. Scale: Depending on the product.
  3. Bake: 350°F for 45 minutes or until well done.
  4. Optional finer texture: Whip eggs with a wire whip for 3-4 minutes, then add remaining ingredients. Blend for 1 minute in low speed, scrape down, then whip for 3-4 minutes.
